No, this food warmer is designed only to maintain the temperature of food that has been pre-heated to a safe temperature.
We have found that many of our customers use the two names interchangeably. The tapered insets, as we call them, are more common and will sit higher in an adapter plate than a straight sided bain marie pot. However, both serve the same purpose.
Warmers are designed to hold food that has already been heated to the appropriate serving temperature of 150 degrees Fahrenheit or higher. Rethermalizers, on the other hand, reheat chilled foods through the HACCP "danger zone" to a safe serving temperature within a controlled timeframe. To meet industry acceptance criteria, rethermalizers must be capable of heating contents from 40-165 degrees Fahrenheit within 120 minutes and maintaining a temperature of 150 degrees Fahrenheit or higher.
Pans that make contact with two parallel sides of the warmer are compatible. Full size, 1/2 size, and 1/3 size pans can be used with the warmer out of the box. 1/4 and 1/6 size pans are not compatible without the use of an adapter bar (sold separately).
