The warmer itself is lined with corrosion-resistant 18 gauge stainless steel, while the pans and covers are made of durable 18/8 stainless steel. The pans even have reinforced corners, making them more resistant to breakage.
For added convenience, the pans feature anti-jam stacking lugs, so they won't stick to other pans when you take them out of storage, and the covers are designed with sleek, heat-resistant handles, so you can quickly and efficiently send out and serve your meals.
Warmers are designed to hold food that has already been heated to the appropriate serving temperature of 150 degrees Fahrenheit or higher. Rethermalizers, on the other hand, reheat chilled foods through the HACCP "danger zone" to a safe serving temperature within a controlled timeframe. To meet industry acceptance criteria, rethermalizers must be capable of heating contents from 40-165 degrees Fahrenheit within 120 minutes and maintaining a temperature of 150 degrees Fahrenheit or higher.
